Three hours from the start of the competition and anticipation for the Canadian team is high.Thisis culmination of Ryan’stwelve year dream, a dream that began in a Maple Ridge school and today is beingrealised on a chilly January day in Lyon.
In front of the kitchens the stands lay empty, eerily quiet, but not for long.

Equipment is unpacked, tools and utensils are arranged with surgical precision on the counters and trays are stacked on speed racks, organised in order of use.The electrical items checked, then rechecked. All good.
Plates are polished and placed in the warmers.
