Bocuse d’Or

Looking back to when I competed the in Bocuse d'Or 1999, the lead up to was the most intense period of my professional career. The amount of focus and dedication needed to attain a good result pushed me to previously unattained limits both culinarily and personally. I remember at the time I was thrilled to have the support around me that enabled me to concentrate on developing my culinary program for the competition.
