Canadians love beer.

It’s sort of a no brainer. But more and more of us don’t want to drink our Dad’s beer brand.  We want our beer to do more for us than a general sense of well-being and invincibility on the dance floor. It’s not enough that the beer tastes great!  We want to support local breweries and local ingredients. We don’t want it sold to us through lifestyle advertising; we want to experience it.

The Day Arrives...(part 3)

The swarm of video cameras, photographers and officials shuffle their way to the front of the Canadian kitchen; MOF Chef Guy Lassausaie stands hands spread out on the counter counting down. Four minutes to go, then three. Hearts began pounding now. Two. One. Guy Lassausaie’s hand went out to shake with the Canadians and wish them “Bon Chance”. A crescendo of cameras click.

The Day Arrives...(part 2)

The kitchen is set and it’s time to drape the Maple Leaf in the bleachers directly in front of Ryan’s kitchen and lay posters on the seats to reserve for his fans.


Photographers scurry about as teams do a final clean-upof any debris in their kitchens, event staff set the tables for the jury and do sound checks. Chef Regis Marcon the ‘colour analyst’ on the broadcast visits to get some informationabout Ryan’s dishes, temperatures, cooking method, etcand some details on the regional product being used, specifically the British Columbia birch syrup.

Three hours from the start of the competition and anticipation for the Canadian team is high.Thisis culmination of Ryan’stwelve year dream, a dream that began in a Maple Ridge school and today is beingrealised on a chilly January day in Lyon.


In front of the kitchens the stands lay empty, eerily quiet, but not for long.

Canada's representative at this prestigious competition is Vancouver's own Chef Ryan Stone, and on January 5, he delivered one of his final practice run-through before representing Canada on the international stage.
