Moxie's Chef Alex Chen proudly represented Canada at this year's prestigious Bocuse d'Or competition in France.
Moxie's welcomes, Chef Alex Chen, the former Executive Chef of the Beverly Hills Hotel as Moxie's new Culinary Architect!
Chef Chen comes to Moxie's after sharing his culinary vision with some of the most of the prestigious and glamorous restaurants in North America. From Vancouver to Toronto to Chicago to Beverly Hills, Chef Chen's culinary philosophy has been described as a balance of classical cuisine with modern techniques infused with big bold flavours. Chef Chen, himself likes to remark that his culinary style represents; "a respect for the past while staying both current and modern". Above all, he believes in keeping the integrity of the ingredient, “the simplest things are also frequently the hardest to achieve”.
Chef Chen has developed his culinary style under mentors like celebrity chef Lynn Crawford (Food Network's Pitchin' In), at the Four Seasons Toronto and Robert Sulatcky, at the Four Seasons Chicago. Chen joined Sulatcky at the Beverly Hills Hotel where they most recently worked together. It was Sulatcky, Canada's Bocuse d'Or representative in 1999 and North America's highest finisher to date, who inspired Alex to represent Canada in the upcoming world's most prestigious culinary competition, the Bocuse d'Or.
